I know what's happening because I had the same problem when I first started knitting.

Next time you come to the beginning of a row, look *carefully* to make sure you are knitting the stitch only, not the two -- what do I call them -- legs? that will appear unless the knitting is set correctly on the needles.

If the stitches are slightly skewed or twisted around on the needle, you'll see two pieces and think you should knit into both.

Easy solution: slip the first stitch of each row. Not only does this get rid of the problem (which is hard to describe, wish I could show you), but sliping the first stitch makes a nice selvege for seams.
