PERHAPS you just think it is undoing the cast-on stitch. On that first stitch that you knit it is very loose. Once you have knit it, you need to pull on it to tighten it up. If you will watch the beginner class videos again on this site, she mentions tightening up that first stitch before going on to the second one. Hope this helps.
